Bike Rally

So, if you’re not part of my immediate family you probably don’t know I’ve been drawing all of my life. As a kid I used to try and imitate anything I could get my hands on, I especially loved cartoon characters like Mickey and the gang as well as the Peanuts.

On Friday, September 26th, 2008, a part of my dream came true, I accepted an offer from The Walt Disney Internet Group to become a production artist/designer/photo editor. I’m in the big leagues now and I ain’t looking back.

All of the hardships and personal struggles I dealt with in my life all lead up to this moment and I wouldn’t change a thing. I wouldn’t be anywhere without the support of my partner Joey and my family. They always looked past the addict and saw the real me trying to claw back out to the surface.

Thank you for your love and support. Belief, perseverance and hard work pays off, take it from me!

We had our basement flood today, our power went out and the sump pump stopped working of course. 3-6 inches of standing water. I was totally freaking out being a new home owner. All we knew is we had to get power to the sump pump fast before the house was completely backed up. We went and bought a generator and before we had figured out how to work it- the power came back on. OMG! What a mess. We had previously moved all of the boxes to the basement, we had several casualties. We have to go and buy some emergency supplies.

Dad wanted my recipe for everyone’s favorite, so here it is. This works best with skin ON pieces. Wash chicken thoroughly and gently shake off excess water. Do not dry with towels as you need some moisture for the dredge to adhere to.

Dredge
2 C All purpose flour, Gold Medal is the BEST
1 Tbsp Salt
2 tsp pepper
Put this mixture in a large zip lock bag or a large plastic bowl with an air tight lid. Shake it up to mix it or use a wire whip. In a large skillet heat CRISCO oil to med high heat. Put about half to three quarters of an inch of oil in the pan. You want the oil to sizzle when you drop flour into it. If you are cooking a lot of chicken you may have to replenish the oil as you go along. Some times it is better to just replace the skillet than to keep on adding oil because the drippings will burn and leave a bitter taste in the oil.

Try to fry the same types of pieces together for a more even browning and cooking time. Fry the thickest pieces first. Stay within sight of the stove as this can burn quite quickly if it isn’t watched. If you are unsure of the doneness, cut into a piece to check it. Different pieces cook at varying times. A nice dark golden brown is the desired color. Drain on paper towels.

Do not cover as the moisture will make it soggy

Gravies
Pan style
Drain off the oil leaving very little oil in the pan with the drippings. Add half a cup of dredge flour to the pan and cook it until it is absorbed by the drippings. Add water to the mixture until the desired thickness desired. Salt and pepper to taste. If you put
too much water in the pan then make a slurry to thicken it back up. For a richer gravy use chicken stock in lieu of water.

Country style
Follow the above intructions but use 2% milk instead of water. Also add pepper to taste. Country gravy should have a mild peppery flavor.

Mom’s Chicken in Mushroom/Oinion Sauce
Fry as above instructed, set aside in a dutch oven or crock pot. Slice a medium onion very thinly. 1 Family size Cream of Mushroom soup thinned with half a can of water. Pour of the excess oil and add the onion to the skillet. Sautee the onion until tender. Add the Mushroom soup and continue to cook until the onion is very transparent. Add this mixture to the Fried Chicken and simmer on med low to low heat for about an hour. Check it at a half hour for doneness. Serve over Rice or Egg noodles. Corn Bread is an excellent accompaniment to this dish.

This dish can also be baked in the oven at 350 degrees for an hour. Durkee French Fried Onions are a great topping if you are going to bake this dish. Add the FF Onions at the half hour point.

You can also use the chicken variations with Pork Chops
The Country gravy and Mushroom Onion works best for Pork.

Also, if you want to do a Country Fried Steak use the following:
Cube Steaks..Get nice flat ones or pound them out when you get home
3 shallow trays for dredges:
1. Milk
2. Beaten egg
3. Dredge Flour
Be sure to dredge BOTH sides….
In that order dredge the cube steaks and fry them at med-high temperature.
Use the Country gravy recipe or there are some very good prepackaged gravies available in the seasoning aisle.

The Building of a Bike

This is the bike i’m building now, hopefully i’ll be riding it next spring. Thats my friend Tim holding my tank on, he’s a welder at our shop and is helping with the fabrication…. Wish me luck! I’ll keep you guys posted as more gets done.
